How are Holland Cattle Co. cattle raised? Cattle are designed by God to graze and thrive on grasses and forages. The native pasture environment we provide yields healthier animals and better-tasting meat. Holland Cattle Co. and its partners' ranch pastures are maintained with minimal interference from human hands to keep our land in its most natural state, which in turn helps maintain water quality and provides a natural habitat for our livestock and abundant wildlife. Holland Cattle Co. has been raising cattle and sheep for over 175 years, and we are proud to continue the tradition of raising wholesome, natural beef. Who will process my beef? A Texas State Inspected & Approved, family-owned butcher shop in San Saba, Texas processes cattle and lamb for Holland Cattle Co.
What is Custom Processing? We offer Custom Processing for our whole and half beef. Custom processing means the customer gets to decide how the beef is cut; for example, what fat percentage is in the ground beef, types of steaks cut, how thick the steaks are cut, which roasts are cut, etc. See Cuts Sheet HERE.
All beef cuts are vacuum-packed for extended freshness. The Holland Cattle Co. beef is dry-aged 14-21 days to maximize tenderness and flavor.
Does the beef cost include the MEAT & PROCESSING? YES, the price charged by Holland Cattle Co. includes the BEEF and the PROCESSING cost combined.
How do your prices compare to grocery store prices? When buying a whole or half beef, the cost is LESS than the grocery store prices for grass-fed beef! Keep in mind, this includes the more expensive cuts of meat average and the less expensive cuts of meat. Our price per pound cost less than grocery store prices when averaging all the meat cuts together.
Why does each beef cost a different amount? Many factors come into play when the actual TOTAL PRICE is calculated using the official Hanging Weight (which is not determined until processing). The determining factor is the live weight/size of the calf on the processing day. We try our best to stay within our live weight range that we state on our Beef Page; however, each calf is a bit different, which reflects in the final cost.
What is the WEIGHT BREAKDOWN? We process our Grass-fed calves just after weaning with their live weight approximately 800 lb.
WHOLE BEEF poundage break-down EXAMPLE.
A 800 lbs. calf on the hoof is called LIVE WEIGHT.
-approximately 800 lbs. = LIVE WEIGHT
After harvesting, the HANGING WEIGHT is approximately 60% of the Live Weight.
-approximately 480 lbs. = HANGING WEIGHT
The PACKAGED MEAT is approximately 70% of the Hanging Weight.
-approximately 340 lbs. = PACKAGED MEAT
HALF BEEF poundage break-down EXAMPLE.
A Half Calf is lbs. LIVE WEIGHT.
-approximately 400 lbs. = LIVE WEIGHT
After harvesting, the HANGING WEIGHT is approximately 60% of the Live Weight.
approximately 240 lbs. +/- = HANGING WEIGHT
The PACKAGED MEAT is approximately 70% of the Hanging Weight.
approximately 170 lbs. +/- = PACKAGED MEAT
What is the COST of a Standard Cut Angus Calf? We charge $7.99 per pound of the HANGING WEIGHT which includes the cost of the calf and standard processing.
WHOLE GRASS-FED BEEF FULL COST BREAKDOWN - EXAMPLE for 800 lbs.
Hanging Weight - 480 lbs. X $7.99 per lb. = Cost of Beef $3,835.20
PROCESSING INCLUDED
TOTAL COST ESTIMATE .............. TOTAL approx. $3,835.20 for approx. 340 lbs. of package meat
Many factors come into play when the exact price per pound of Packaged Meat is determined:
Exact Hanging Weight (which is not determined until the processing day)
Fat percentage in ground beef
Type of steak cuts (some customers prefer more fattier or leaner cuttings)
Steaks with bone-in
Keeping the head, organs, tongue or dog bones
Who pays the Processing Fee? The Standard Processing Fee is included in the Hanging Weight price per pound of $7.99. If you choose cuts to be marinated, cuts with bacon wrapping, etc., there will be an additional fee. Additional processing beyond Standard Processing will be Custom Pricing.
